Brunch

Brunch is by far my favorite meal of the day. Breakfast or lunch fare served with unlimited alcoholic beverages. Mm, mm, good. This is why yesterday's class, Brunch Practicum, was one of my favorite classes I think we have had thus far. Not only did we prepare brunch classics, but we were able to experience preparing foods to order. It was a fun mini restaurant simulation. Here was a tasty breakfast favorite that we made yesterday. (I'm too tired to post the Chickpea Crepe recipe-look for it later in the week)

Waffles with Fruit Syrup: Yields 6-8 Waffles
1 and 3/4 cups whole wheat pastry flour, sifted
2 tsp baking powder
1 Tbsp maple syrup
3 eggs, separated
1/4 cup butter, melted
1 and 1/2 cups organic milk
1/2 tsp finely ground salt

Fruit Syrup:
9 oz jam
1/2 cup apple juice

Fruit and whipped cream to serve

1. In a large bowl, whisk together flour, baking powder and maple crystals.
2. In a separate bowl, beat egg yolks. Add butter, milk and salt.
3. Make a well in the center of the dry ingredients. Pour in liquid ingredients and combine with a few swift strokes. Batter should look similar to a muffin batter.
4. Beat egg whites until stiff. Fold into batter with a rubber spatula to combine.
5. Prepare fruit syrup by combining the jam and apple juice in a small saucepan over high heat. Cook, stirring occasionally, until thickened, about 10 minutes.
6. Heat waffle iron. Cook according to appliance directions.
