Trekking on the Trail
This will be a goody but quicky. I know I teased you with mention of Trail Mix Bars this past week. They are packed with fiber and good for you stuff. They taste healthy with out tasting like health food. They were, in a word: awesome! I gave them as a gift and was instantly asked for the recipe. So here it is: check it out below:
Trail Mix Bars: Yields 12 Bars
1 cup oats
1 T flax seeds
1/2 cup flaked unsweetened coconut
1 cup cashews
1 cup almonds
1/2 cup dried apricots, chopped
1/2 cup dried cherries
1/2 cup almond butter
1/2 cup agave
1 T canola oil
zest of one lemon (can also substitute 1 T orange zest)
Heat oven to 325. In a food processor combine all ingredients and pulse until nuts are chopped, but still chunky. The mixture should hold together and be able to be formed into balls. Using your hands or an ice cream scoop, form 12 equal sized balls and drop onto a parchment-lined baking sheet. Bake for 20 minutes, or until golden. Let cool completely before serving or packing.
As I said, these are super simple. The recipe was inspired by one that I saw in Food and Wine Magazine, but the ingredients have been changed to be gluten-free and, well, tastier!
