Another Breakfast for Dinner

We love having breakfast for dinner in our apartment. Breakfast foods are just so satisfying. They perk you up and comfort you. The ingredients can change immensely, but the menu stays pretty much the same. You have your standard egg dishes, potatoes, sweat breads, and breakfast meats. Sometimes to make it healthy, you throw an orange wheel or a slice of melon on the plate. The meal is fairly standard, but it's welcome anytime in our house. Friday night, we ate a winter breakfast meal of Celery Root and Broccoli Hash with Smoked Cheddar Cheese and Over-Easy Eggs. It was a super simple meal that was the perfect finish for a long work day and a trek home in the snow.

Celery Root and Broccoli Hash with Smoked Cheddar Cheese and Over-Easy Eggs: Yields 4 Servings
2 lbs celery root, peeled and cubed
1 lb broccoli, stem cubed and top cut into florettes
1 small red onion, diced
1/2 cup prepared balsamic vinaigrette dressing
8 oz smoked cheddar cheese, shredded
4-8 cooked over-easy eggs

Heat oven to 375. Toss celery root, broccoli, and red onion with balsamic vinaigrette. Transfer to a greased sheet pan and roast, turning occasionally, until tender and golden (about 40 minutes). Transfer to plates and top with 2 ounces shredded cheese and 1 or 2 eggs.


Hope you enjoy this one. I had it again for breakfast today and it was still great! The egg yolk makes a creamy sauce over the hash that compliments it perfectly. Dinner tomorrow night is actually another breakfast meal. I am practicing gluten-free biscuits and hope to make biscuit sandwiches, complete with some of my homemade jam. Wish me luck!
