Happy New Year
As planned, I am launching this baby today, January 1, 2010! Just a note, but don't you feel like you just finally got used to writing 2009? I guess we have 364 days to readjust.
In the words of Mark Twain, "New Year's is a harmless annual institution, of no particular use to anybody save as a scapegoat for promiscuous drunks, and friendly calls and humbug resolutions." Hope you all enjoyed your celebrations. Mine was full of friends, both old and new, a mild snow storm and plenty of Trader Joe's finest two buck Chuck-relaxed New York perfection.
I had intended to write today about some fabulous brunch I made for friends, or about the delicious feast I had intended for tonight to ring in the new year. However, as I am quickly learning, life never goes as planned. I am recovering from the ass-kicking I got from a bad case of food poisoning on Monday night. So, the one meal I could manage to eat today was simple, yet delicious. I made Cajun home fries (yummy but idiotic, all things considered) and soft scrambled eggs with chives and goat cheese. Sorry they're not more exciting, but here are the recipes:
Home Fries: Serves 4 (What, I love leftovers!)
2 Tablespoons butter, divided
2 potatoes, large dice
1 red bell pepper, large dice
1 med red onion, large dice
1 Teaspoon Cajun seasoning
salt and pepper to taste
Place potatoes in a medium saucepan, cover with cold water, and bring to a boil over high heat. Once boiling, cook for about 5 minutes, or until the potatoes are about halfway done. Drain. Meanwhile, in a large sautee pan, sautee the peppers and onion in 1 tablespoon of butter. Season with salt and pepper to taste. Transfer cooked peppers and onions to a bowl and add potatoes to the sautee pan, along with the remaining tablespoon of butter. Cook for about 2 minutes per side, or until browned and crisp. Add in peppers and onions, along with Cajun seasoning. Adjust seasonings, if necessary.
Scrambled Eggs: Serves Me (aka 1)
1 tsp butter, or small amount to grease the pan (you can also use Pam if you are so inclined)
3 eggs, beaten with a pinch of salt
1-2 Tablespoons soft goat cheese
1 tsp chives, finely chopped
Melt butter in small sautee pan over medium heat. Add eggs and chives, stirring and folding with a rubber spatula. When the eggs start to take shape a little, but before they are dry, stir in goat cheese. Cook until desired consistency-I like mine a little under-done. Serve garnished with additional goat cheese, chives, or pepper if desired.
Again, these were simple babies, but my whacked out belly enjoyed them, for the time being. Hope you enjoy as well.
